- 4 chicken thighs, skin-on and bone-in
- Salt and freshly ground black pepper, to taste
- 1 cup apple cider (preferably fresh and unfiltered)
- 1 tablespoon Dijon mustard
- 2 tablespoons unsalted butter, at room temperature
- 2 sprigs fresh rosemary, finely chopped
- 1 medium apple, sliced (such as Granny Smith or Honeycrisp)
- Additional fresh rosemary for garnish
Instructions
- Season chicken thighs generously with salt and pepper. Ensure the skin is dry for optimum crispiness.
- In a large, oven-safe skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken, skin-side down. Sear until golden brown, about 5-7 minutes. Flip and brown the other side for an additional 3-4 minutes.
- Remove the chicken from the skillet and set aside. In the same pan, pour in the apple cider to deglaze, scraping the bottom. Stir in the Dijon mustard, butter, and finely chopped rosemary.
- Return the chicken to the skillet, skin-side up. Pour the glaze over the top and place apple slices around the chicken.
- Transfer the skillet to a preheated oven at 375°F (190°C). Roast for 30-35 minutes until the chicken reaches an internal temperature of 165°F (74°C).
- Let the chicken rest for 5 minutes before plating.
Notes
Opt for skin-on, bone-in thighs for enhanced flavor. For a thicker glaze, reduce the apple cider before adding the chicken.
