Ingredients

  • 1 cup all-purpose flour (plus extra for dusting)
  • 1/4 cup high-quality olive oil
  • 1 teaspoon sea salt
  • 2 tablespoons fresh rosemary (finely chopped)
  • Coarse sea salt (for sprinkling)
  • Optional: additional fresh rosemary (for garnish)

Instructions

  1. In a mixing bowl, combine sourdough starter, all-purpose flour, olive oil, sea salt, and chopped rosemary. Stir until a cohesive dough forms.
  2. Turn the dough onto a lightly floured surface and knead gently for about 5 minutes until smooth and elastic.
  3. Wrap the dough in plastic wrap and let it rest at room temperature for 30 minutes.
  4. Preheat your oven to 350°F (175°C). Divide the dough into two portions and roll each out between parchment paper to 1/8-inch thickness.
  5. Cut the rolled dough into desired shapes and transfer to a lined baking sheet.
  6. Sprinkle with coarse sea salt and additional rosemary, if using.
  7. Bake for 15–20 minutes until edges are golden brown, keeping a close watch to avoid burning.
  8. Remove from the oven and let the crackers cool on a wire rack.
