- 1 cup sourdough starter (active and bubbly)
- 1 cup all-purpose flour (plus extra for dusting)
- 1/4 cup high-quality olive oil
- 1 teaspoon sea salt
- 2 tablespoons fresh rosemary (finely chopped)
- Coarse sea salt (for sprinkling)
- Optional: additional fresh rosemary (for garnish)
Instructions
- In a mixing bowl, combine sourdough starter, all-purpose flour, olive oil, sea salt, and chopped rosemary. Stir until a cohesive dough forms.
- Turn the dough onto a lightly floured surface and knead gently for about 5 minutes until smooth and elastic.
- Wrap the dough in plastic wrap and let it rest at room temperature for 30 minutes.
- Preheat your oven to 350°F (175°C). Divide the dough into two portions and roll each out between parchment paper to 1/8-inch thickness.
- Cut the rolled dough into desired shapes and transfer to a lined baking sheet.
- Sprinkle with coarse sea salt and additional rosemary, if using.
- Bake for 15–20 minutes until edges are golden brown, keeping a close watch to avoid burning.
- Remove from the oven and let the crackers cool on a wire rack.
Notes
Store cooled crackers in an airtight container at room temperature. For longer storage, freeze in a sealed bag and re-crisp before serving.
