Ingredients
**For the Cookie Dough:**
1 cup unsalted butter, softened
1 cup granulated sugar
1 cup brown sugar, packed
2 large eggs, at room temperature
1 tsp vanilla extract
3 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
**For the Cheesecake Filling:**
1 cup cream cheese, softened
1/2 cup powdered sugar
1/4 cup salted caramel sauce
**For Garnish:**
Additional salted caramel sauce for drizzling
Instructions
1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
2. Cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
3. Add eggs one at a time, mixing well, then stir in vanilla extract.
4. In another bowl, whisk together flour, baking soda, and salt.
5. Gradually mix dry ingredients into wet ingredients until just combined.
6. In a separate bowl, blend cream cheese and powdered sugar until smooth, then swirl in the caramel sauce.
7. Gently fold the cheesecake mixture into the cookie dough—don’t overmix.
8. Scoop dough onto baking sheet using a tablespoon, spacing cookies 2 inches apart.
9. Bake 10–12 minutes until edges are lightly golden.
10. Cool on tray for 5 minutes, then transfer to a wire rack. Drizzle with extra caramel before serving.
