- 2 chicken breasts
- 2 tablespoons olive oil
- 1 tablespoon smoked paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 can black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 1 bell pepper, diced
- 1 cup shredded cheese
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season the chicken breasts with smoked paprika, cumin, salt, and pepper.
- Cook the seasoned chicken in the skillet for 5-7 minutes on each side until fully cooked.
- Remove the chicken and set aside.
- Add the diced bell pepper, black beans, and corn to the skillet and cook for about 5 minutes.
- Return the chicken to the skillet, sprinkle cheese on top, and cover to melt for 2-3 minutes.
- Serve hot, garnished with fresh herbs if desired.
Notes
