Description

This Sausage and Sweet Potatoes with Honey Garlic Sauce is a cozy, one-skillet dinner that’s sweet, savory, and ready in just 30 minutes. Perfect for busy weeknights, meal prep, or anytime comfort food.

Ingredients

Scale

1 lb sausage (Italian, chicken, or turkey), sliced into rounds

2 large sweet potatoes, peeled and cubed

1 tablespoon olive oil

1 teaspoon paprika

Salt and pepper, to taste

1/4 cup honey

3 cloves garlic, minced

2 tablespoons soy sauce (or tamari for gluten-free)

Fresh parsley, chopped (for garnish)

Instructions

1. Peel and cube the sweet potatoes into even ½-inch cubes.

2. Slice the sausage into thick rounds for better browning.

3. Heat olive oil in a large skillet over medium heat. Add sausage and brown for 5–7 minutes, turning occasionally.

4. Add the cubed sweet potatoes and cook for another 5–6 minutes, stirring occasionally.

5. In a bowl, whisk together honey, minced garlic, soy sauce, paprika, salt, and pepper.

6. Pour the sauce into the skillet and stir well to coat all the ingredients.

7. Cover and simmer on low heat for 10 minutes, until sweet potatoes are tender and the sauce has thickened.

8. Sprinkle chopped parsley before serving.

Notes

You can store leftovers in the fridge for 3 days or freeze for up to 2 months.

Swap sweet potatoes for butternut squash or add bell peppers for extra veggies.

Use spicy sausage or red pepper flakes to bring some heat.
