- 1 lb ground turkey (preferably lean)
- 2 medium zucchinis, diced
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes (no salt added)
- 1 tsp smoked paprika
- 1 tsp dried oregano
- Salt and freshly cracked black pepper to taste
- ¼ cup fresh basil, finely chopped
- ¼ cup grated Parmesan cheese
- Optional: A drizzle of quality olive oil for finishing
Instructions
- In a large skillet, heat a tablespoon of olive oil over medium heat. Add the onions and cook until translucent, about 3-4 minutes. Stir in the garlic, cooking just until fragrant.
- Incorporate the ground turkey into the skillet, breaking it apart with a wooden spoon. Cook until evenly browned, approximately 6-8 minutes.
- Mix in the diced zucchini, stirring well. Allow it to cook for about 4-5 minutes until tender but not mushy.
- Pour in the diced tomatoes, smoked paprika, and oregano. Season with salt and pepper. Allow the mixture to simmer for 5 more minutes to meld the flavors.
- Remove the skillet from heat, then sprinkle with fresh basil and Parmesan cheese. A light drizzle of olive oil can be added for an extra touch of richness.
Notes
For an elevated experience, substitute ground turkey with ground lamb or add spinach for nutrition.
