Description

Tender beef cubes cooked in a glossy garlic-butter sauce using a slow cooker, perfect for a restaurant-quality dish at home.


Ingredients

  • 2 lb (900 g) beef sirloin or chuck, cut into 1–1½ inch (2.54 cm) cubes
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced (plus 2 whole cloves for slow cooking)
  • 3 tbsp unsalted butter, room temperature
  • 1 cup low-sodium beef broth
  • 2 tbsp soy sauce or tamari
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1 tbsp cornstarch mixed with 2 tbsp cold water (slurry)
  • 1 tbsp fresh parsley, finely chopped
  • Flaky sea salt and freshly ground black pepper to taste
  • Lemon zest (optional)

Instructions

  1. Pat the beef cubes dry and season lightly with salt and pepper. Heat a large skillet over medium-high heat with 1 tbsp oil and sear beef in batches until well browned on all sides.
  2. Transfer to the slow cooker.
  3. In the same skillet, add the sliced onion and the two whole garlic cloves; sweat until translucent and slightly caramelized.
  4. Deglaze the skillet with a splash of beef broth, scraping browned bits into the slow cooker over the beef.
  5. Add the remaining beef broth, soy sauce, Worcestershire, and Dijon to the slow cooker. Stir gently to combine.
  6. Cover and cook on low for 4–5 hours or on high for 2–3 hours, until beef is fork-tender.
  7. Remove two whole garlic cloves about 20 minutes before serving and discard.
  8. Stir the cornstarch slurry into the slow cooker to thicken the sauce.
  9. Off heat, whisk in room-temperature butter piece by piece to form a butter-emulsion.
  10. Finish with minced garlic, adjusting seasoning with salt and pepper, and optional lemon zest.
  11. Serve the beef bites over a pool of the glossy sauce, garnished with parsley and flaky sea salt.

Notes

For added flavor, consider adding a sprig of thyme or bay leaf during cooking. Serve with mashed potatoes or parsnip purée for an elevated dish.
