Description
Tender beef cubes cooked in a glossy garlic-butter sauce using a slow cooker, perfect for a restaurant-quality dish at home.

- 2 lb (900 g) beef sirloin or chuck, cut into 1–1½ inch (2.5–4 cm) cubes
- 1 medium onion, thinly sliced
- 2 cloves garlic, minced (plus 2 whole cloves for slow cooking)
- 3 tbsp unsalted butter, room temperature
- 1 cup low-sodium beef broth
- 2 tbsp soy sauce or tamari
- 1 tbsp Worcestershire sauce
- 1 tsp Dijon mustard
- 1 tbsp cornstarch mixed with 2 tbsp cold water (slurry)
- 1 tbsp fresh parsley, finely chopped
- Flaky sea salt and freshly ground black pepper to taste
- Lemon zest (optional)
Instructions
- Pat the beef cubes dry and season lightly with salt and pepper. Heat a large skillet over medium-high heat with 1 tbsp oil and sear beef in batches until well browned on all sides.
- Transfer to the slow cooker.
- In the same skillet, add the sliced onion and the two whole garlic cloves; sweat until translucent and slightly caramelized.
- Deglaze the skillet with a splash of beef broth, scraping browned bits into the slow cooker over the beef.
- Add the remaining beef broth, soy sauce, Worcestershire, and Dijon to the slow cooker. Stir gently to combine.
- Cover and cook on low for 4–5 hours or on high for 2–3 hours, until beef is fork-tender.
- Remove two whole garlic cloves about 20 minutes before serving and discard.
- Stir the cornstarch slurry into the slow cooker to thicken the sauce.
- Off heat, whisk in room-temperature butter piece by piece to form a butter-emulsion.
- Finish with minced garlic, adjusting seasoning with salt and pepper, and optional lemon zest.
- Serve the beef bites over a pool of the glossy sauce, garnished with parsley and flaky sea salt.
Notes
For added flavor, consider adding a sprig of thyme or bay leaf during cooking. Serve with mashed potatoes or parsnip purée for an elevated dish.
