- 4 boneless, skinless chicken breasts (preferably organic)
- 1 cup long-grain white rice
- 1/4 cup olive oil (extra virgin for flavor)
- 2 lemons (zested and juiced)
- 4 cloves garlic (minced)
- 1 tablespoon fresh thyme (finely chopped)
- 1 tablespoon fresh rosemary (finely chopped)
- Salt and black pepper (to taste)
- Fresh parsley (finely chopped, for garnish)
Instructions
- Season the chicken breasts generously with salt and black pepper.
- In a bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, thyme, and rosemary.
- Pour half the sauce into the bottom of the slow cooker. Place the seasoned chicken on top, then pour the remaining sauce over the chicken.
- Cover and cook on low for 6 hours or high for 3 hours, until the chicken is tender and can be easily shredded.
- About 20 minutes before serving, prepare the rice according to package instructions.
- Serve the chicken over a bed of rice, drizzle with cooking juices, and garnish with parsley.
Notes
For added depth, consider searing the chicken first. Adjust lemon juice to preference for acidity.
