Description

Ingredients

  • 4 boneless, skinless chicken breasts (preferably organic)
  • 1 cup long-grain white rice
  • 1/4 cup olive oil (extra virgin for flavor)
  • 2 lemons (zested and juiced)
  • 4 cloves garlic (minced)
  • 1 tablespoon fresh thyme (finely chopped)
  • 1 tablespoon fresh rosemary (finely chopped)
  • Salt and black pepper (to taste)
  • Fresh parsley (finely chopped, for garnish)

Instructions

  1. Season the chicken breasts generously with salt and black pepper.
  2. In a bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, thyme, and rosemary.
  3. Pour half the sauce into the bottom of the slow cooker. Place the seasoned chicken on top, then pour the remaining sauce over the chicken.
  4. Cover and cook on low for 6 hours or high for 3 hours, until the chicken is tender and can be easily shredded.
  5. About 20 minutes before serving, prepare the rice according to package instructions.
  6. Serve the chicken over a bed of rice, drizzle with cooking juices, and garnish with parsley.

Notes

For added depth, consider searing the chicken first. Adjust lemon juice to preference for acidity.
