Ingredients

- 4 chicken breasts
- 1 cup chicken broth
- 2 lemons (juiced and zested)
- 2 tablespoons olive oil
- 3 cloves garlic (minced)
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 cups cooked rice
- Fresh parsley for garnish
Instructions
- In a slow cooker, combine chicken broth, lemon juice, lemon zest, olive oil, garlic, thyme, oregano, salt, and pepper.
- Add the chicken breasts to the slow cooker, making sure they are well-coated with the mixture.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
- Once cooked, shred the chicken with two forks and mix it back into the juices.
- Serve the lemon herb chicken over fluffy rice and garnish with fresh parsley.
Notes
For added flavor, marinate the chicken in the lemon mixture overnight before cooking. You can also add vegetables like carrots, bell peppers, or zucchini to the slow cooker.
