- 2 cups Romaine lettuce, chopped

- 8 small corn or flour tortillas (warmed)
Instructions
- In a bowl, mix the olive oil, lemon juice, garlic powder, salt, and pepper. Add the chicken thighs, ensuring they are well-coated, and marinate for at least 30 minutes.
- Heat a skillet over medium-high heat and add the marinated chicken, searing until golden brown, about 4-5 minutes per side, until the internal temperature reaches 165°F.
- In a separate bowl, combine the Caesar dressing and Dijon mustard, stirring until well blended.
- Once the chicken is cooked, slice it into thin strips. In each tortilla, layer the chopped Romaine, sliced chicken, a drizzle of the dressing, and a sprinkle of grated Parmesan.
- Top with fresh herbs and cracked black pepper to taste, and enjoy immediately.
