Description

A modern twist on classic Caesar salad, these tacos feature marinated chicken, fresh greens, and tangy dressing for an elegant yet approachable dish.

Ingredients

Scale
  • 1 pound boneless, skinless chicken thighs, trimmed
  • 2 tablespoons olive oil (extra virgin)
  • 1 tablespoon lemon juice (freshly squeezed)
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup creamy Caesar dressing
  • 1 tablespoon Dijon mustard
  • 2 cups Romaine lettuce, chopped
  • 1/2 cup grated Parmesan cheese
  • Fresh herbs (such as parsley or chives, finely chopped)
  • Freshly cracked black pepper (to garnish)
  • 8 small corn or flour tortillas (warmed)

Instructions

  1. In a bowl, mix the olive oil, lemon juice, garlic powder, salt, and pepper. Add the chicken thighs, ensuring they are well-coated, and marinate for at least 30 minutes.
  2. Heat a skillet over medium-high heat and add the marinated chicken, searing until golden brown, about 4-5 minutes per side, until the internal temperature reaches 165°F.
  3. In a separate bowl, combine the Caesar dressing and Dijon mustard, stirring until well blended.
  4. Once the chicken is cooked, slice it into thin strips. In each tortilla, layer the chopped Romaine, sliced chicken, a drizzle of the dressing, and a sprinkle of grated Parmesan.
  5. Top with fresh herbs and cracked black pepper to taste, and enjoy immediately.

Notes

For optimal texture, assemble tacos just before serving. Store leftover chicken separately from toppings.
