Ingredients

  • 1 packet (2 ¼ teaspoons) active dry yeast
  • 1/2 teaspoon salt
  • 1 tablespoon granulated sugar
  • 3/4 cup warm water (110°F)
  • 2 tablespoons unsalted butter, softened
  • 1/4 cup baking soda
  • 4 cups water
  • Coarse sea salt
  • 1 tablespoon melted butter (for brushing)

Instructions

  1. In a mixing bowl, dissolve the granulated sugar in warm water, then sprinkle the yeast on top. Let it sit for about 5 minutes until frothy.
  2. In a separate bowl, whisk together the flour and salt.
  3. Add the softened butter to the yeast mixture, then gradually stir in the flour until a dough forms.
  4. Transfer the dough to a floured surface. Knead for about 5–7 minutes until it is smooth and elastic.
  5. Place the dough in a lightly greased bowl, cover it, and let it rise in a warm area for approximately one hour or until it doubles in size.
  6. In a large saucepan, bring water and baking soda to a gentle boil.
  7. Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a long rope and twist into a pretzel shape.
  8. Carefully drop each pretzel into the boiling baking soda bath for about 30 seconds, then remove with a slotted spoon and place on a parchment-lined baking sheet.
  9. Brush each pretzel with melted butter and sprinkle generously with coarse sea salt.
  10. Preheat your oven to 450°F (232°C) and bake for 12–15 minutes, until golden brown and fragrant.
