Ingredients

  • 250 g (9 oz) halloumi, sliced 5–7 mm thick, patted dry
  • 3 tbsp honey, room temperature
  • 1 tsp chili flakes or 1 tbsp sriracha
  • 1 tsp lime juice, freshly squeezed
  • 1 tsp soy sauce
  • 1/2 small red onion, thinly sliced (optional)
  • 1 small avocado, sliced
  • Fresh cilantro leaves, roughly chopped
  • Lime wedges, for serving
  • 1 tbsp olive oil
  • Pinch of flaky sea salt

Instructions

  1. Prepare the sauce: Warm honey in a small saucepan and whisk in chili flakes or sriracha, lime juice, and soy sauce until glossy.
  2. Heat the pan: Warm a heavy skillet and add olive oil until shimmering.
  3. Sear the halloumi: Cook slices in a single layer for 1.5–2 minutes per side until golden and crisp.
  4. Glaze the cheese: Reduce heat, spoon warm spicy honey over each slice, coating evenly.
  5. Warm the tortillas: Char each tortilla in the skillet for 10–15 seconds per side.
  6. Assemble the tacos: Layer halloumi on tortillas, add avocado, pickled onions, and cilantro, then drizzle with spicy honey.

Notes

For extra flavor, quick-pickle onions in vinegar and water with a pinch of sugar for 10 minutes. Use lime zest in the sauce for aromatic lift.
