- 1 lb boneless, skinless chicken breast, diced
- 2 tablespoons olive oil
- 2 tablespoons Sriracha sauce (adjust for spice level)
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 4 large flour tortillas
- 1 cup mixed greens (like lettuce and spinach)
- ¼ cup shredded cheese (cheddar or pepper jack)
- ½ cup diced tomatoes
- ½ cup plain Greek yogurt (optional)
- 1 tablespoon lime juice (optional)
- A pinch of salt (optional)
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the diced chicken and cook until it’s browned and cooked through, about 6-8 minutes.
- Stir in the Sriracha sauce, garlic powder, salt, and pepper. Cook for another 2-3 minutes until everything is combined and coated.
- Warm the flour tortillas in a separate skillet or microwave for a few seconds to make them pliable.
- Layer some mixed greens, spicy chicken, cheese, and diced tomatoes on each tortilla. Be careful not to overfill.
- Fold in the sides and roll the tortilla tightly from the bottom up.
- Optionally, grill them on a panini press for a minute for a crispy texture.
Notes
Use leftover roasted chicken for faster prep. Adjust Sriracha to taste. Add avocado for creaminess. Warm tortillas to prevent tearing.
