- 3/4 cup sugar (or 1/2 cup brown sugar)
- 1 large egg, beaten (room temperature)
- 1 teaspoon vanilla extract (or almond extract)
- 1 cup all-purpose flour (or gluten-free 1:1 flour)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 4×8 inch loaf pan and line it with parchment.
- Stir the mashed bananas with the melted butter until combined.
- Add the baking soda and salt, then stir to distribute evenly.
- Mix in the sugar, beaten egg, and vanilla extract until smooth.
- Fold in the flour gently until just incorporated—do not overmix.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 60-65 minutes, or until a toothpick inserted in the center comes out clean.
- Let the loaf cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
Notes
Use very ripe bananas for best sweetness. Keep the egg at room temperature for even mixing.
