Description

Ingredients

  • 1/3 cup melted butter (or vegetable oil for dairy-free)
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar (or 1/2 cup brown sugar)
  • 1 large egg, beaten (room temperature)
  • 1 teaspoon vanilla extract (or almond extract)
  • 1 cup all-purpose flour (or gluten-free 1:1 flour)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 4×8 inch loaf pan and line it with parchment.
  2. Stir the mashed bananas with the melted butter until combined.
  3. Add the baking soda and salt, then stir to distribute evenly.
  4. Mix in the sugar, beaten egg, and vanilla extract until smooth.
  5. Fold in the flour gently until just incorporated—do not overmix.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Bake for 60-65 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the loaf cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

Notes
