  • 2 medium sweet potatoes, peeled and diced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 teaspoon smoked paprika
  • Fresh parsley, finely chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss the diced sweet potatoes and sliced bell peppers with olive oil, smoked paprika, salt, and pepper until evenly coated. Spread them onto a baking sheet in a single layer.
  3. Place the tray in the preheated oven and roast for 25–30 minutes, or until golden and tender, flipping halfway to ensure even cooking.
  4. While the vegetables are roasting, heat a skillet over medium-high heat. Add olive oil until shimmering. Season the steak cubes with salt and pepper. Sear them in batches for about 2-3 minutes, avoiding overcrowding the pan.
  5. Once all steak bites are cooked, remove the vegetables from the oven and toss them gently with the steak.
  6. Transfer to a serving platter, sprinkle with fresh parsley, and serve alongside lemon wedges.
