Ingredients

  • 1/4 cup chia seeds
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons maple syrup or agave
  • 1/4 cup vegan cream cheese
  • 1/2 cup fresh strawberries, pureed
  • Fresh strawberries, sliced (for topping)

Instructions

  1. In a mixing bowl, combine almond milk, chia seeds, vanilla extract, and maple syrup. Stir until mixed and let sit for about 15 minutes to thicken.
  2. In a separate bowl, blend pureed strawberries with vegan cream cheese until smooth.
  3. Once the chia pudding has thickened, take serving cups and layer the chia pudding with the cheesecake mixture, repeating until cups are filled.
  4. Top with fresh strawberry slices and chill in the refrigerator for at least 1 hour before serving.

Notes

For a thicker consistency, let the chia pudding sit longer before serving. You can also use coconut milk for a creamier texture and try adding other fruits like blueberries or raspberries.
