Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan.
  2. In a mixing bowl, whisk together the flour, baking powder, and salt. In another bowl, cream the softened butter and sugar until light and fluffy. Incorporate the egg and vanilla extract, blending well. Gradually add the dry mixture and stir until just combined.
  3. Press the cookie dough into the bottom of the prepared pan, creating an even layer. Bake for 10-12 minutes, or until lightly golden. Allow it to cool completely in the pan.
  4. In a large bowl, beat the softened cream cheese until smooth. Gradually add sugar and vanilla extract, mixing until fully incorporated. Add the eggs one at a time, ensuring each is fully blended before adding the next.
  5. Pour the cheesecake filling over the cooled cookie base, smoothing the top. Bake for 30-35 minutes, or until the filling is set but still slightly jiggly in the center.
  6. Remove from the oven and allow to cool at room temperature before refrigerating for at least 4 hours, preferably overnight.
