Description

Deliciously chewy cookies made with oats and coconut, offering a guilt-free treat without added sugar.


Ingredients

  • 2 cups rolled oats
  • 1 cup shredded coconut
  • 1/2 cup almond flour
  • 1/4 cup melted coconut oil
  • 1/4 cup honey or sugar-free syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Optional: dark chocolate chips or chopped nuts

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  2. In a large bowl, combine rolled oats, shredded coconut, almond flour, baking soda, and salt.
  3. In a separate bowl, mix melted coconut oil, honey (or chosen syrup), and vanilla extract.
  4. Gradually combine the wet mixture with the dry ingredients until well mixed.
  5. If desired, fold in chocolate chips or nuts.
  6. Drop spoonfuls of dough onto the baking sheet and flatten lightly.
  7. Bake for 12-15 minutes until edges are golden brown.
  8. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For best results, melt the coconut oil but do not overheat. Store cookies in an airtight container for up to a week or freeze for longer storage.
