Ingredients

  • 4 cups leafy greens (collard greens, turnip greens, or spinach)
  • 1 large onion, chopped
  • 2 stalks of celery, chopped
  • 1 bell pepper, chopped
  • 4 cloves of garlic, minced
  • 46 cups chicken or vegetable broth
  • 1 pound sausage (Andouille or smoked, sliced) – optional
  • 12 cups cooked and shredded chicken – optional
  • 1 pound seafood (shrimp or crawfish) – optional
  • 1 cup tofu, cubed – optional
  • 1 cup carrots, chopped
  • 1 cup okra, sliced
  • 1 can diced tomatoes
  • 1/2 cup rice (uncooked) – optional
  • 2 medium potatoes, diced – optional
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper
  • 23 bay leaves
  • 1 tablespoon apple cider vinegar or lemon juice

Instructions

  1. Heat oil in a pot and sauté the onions, celery, and garlic until fragrant.
  2. Add prepared leafy greens and let them wilt.
  3. Pour in the broth, bring to a boil, then reduce to a simmer for 30-45 minutes.
  4. Add sausage, chicken, or seafood during the last 15-10 minutes as preferred.
  5. Season with salt, pepper, and cayenne, adjusting to taste.
  6. Add vinegar or lemon juice before serving for extra brightness.

Notes

Swamp Soup can be made ahead of time and freezes well. Adjust seasoning based on your taste preferences.
