- 4 cups leafy greens (collard greens, turnip greens, or spinach)
- 1 large onion, chopped
- 2 stalks of celery, chopped
- 1 bell pepper, chopped
- 4 cloves of garlic, minced
- 4–6 cups chicken or vegetable broth
- 1 pound sausage (Andouille or smoked, sliced) – optional
- 1–2 cups cooked and shredded chicken – optional
- 1 pound seafood (shrimp or crawfish) – optional
- 1 cup tofu, cubed – optional
- 1 cup carrots, chopped
- 1 cup okra, sliced
- 1 can diced tomatoes
- 1/2 cup rice (uncooked) – optional
- 2 medium potatoes, diced – optional
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/2 teaspoon cayenne pepper
- 2–3 bay leaves
- 1 tablespoon apple cider vinegar or lemon juice
Instructions
- Heat oil in a pot and sauté the onions, celery, and garlic until fragrant.
- Add prepared leafy greens and let them wilt.
- Pour in the broth, bring to a boil, then reduce to a simmer for 30-45 minutes.
- Add sausage, chicken, or seafood during the last 15-10 minutes as preferred.
- Season with salt, pepper, and cayenne, adjusting to taste.
- Add vinegar or lemon juice before serving for extra brightness.
Notes
