  • 1 lb (450 g) boneless skinless chicken thighs, thinly sliced
  • 6 medium flour tortillas or large butter lettuce leaves
  • 1/3 cup sweet chili sauce
  • 1 tbsp soy sauce (low-sodium preferred)
  • 1 tbsp rice vinegar or fresh lime juice
  • 1 garlic clove, minced
  • 1 tsp toasted sesame oil
  • 1/2 cup shredded cabbage or crunchy slaw
  • 1 small cucumber, thinly sliced
  • 2 tbsp fresh cilantro, finely chopped
  • 1 small red chili or 1 tsp chili flakes (optional)
  • Lime wedges for garnish
  • Toasted sesame seeds for garnish

Instructions

  1. Pat the chicken dry and season lightly with salt and pepper.
  2. Heat 1 tbsp neutral oil in a large skillet over medium-high heat until shimmering.
  3. Add chicken in a single layer and sear until golden brown at the edges, about 3–4 minutes per side.
  4. Reduce heat to medium, push chicken to one side and add minced garlic; sauté until fragrant and pale gold, about 30 seconds.
  5. Whisk the sweet chili sauce, soy, rice vinegar (or lime), and sesame oil in a small bowl.
  6. Pour the mixture into the skillet, lowering heat to a gentle simmer. Spoon the sauce over the chicken as it thickens.
  7. Remove the chicken from heat when the glaze caramelizes slightly and let it rest for 2–3 minutes.
  8. Assemble the wraps with warmed tortillas, adding cabbage, glazed chicken, cucumber, cilantro, and a squeeze of lime. Roll snugly.
  9. Toast the finished wrap in the skillet for 30–45 seconds per side for a crisp edge.
  10. Slice each wrap on the diagonal and serve with lime wedges and a small ramekin of extra sweet-chili glaze.

Use chicken thighs for juiciness; warm tortillas for pliability; allow the glazed chicken to rest for tenderness.
