- 2 ripe pears, peeled and sliced
- 4 ounces pancetta, diced
- 1 cup fresh peas (or frozen)

Instructions
- In a skillet over medium heat, add the diced pancetta. Cook for 5-7 minutes, or until crispy and golden. Remove pancetta and set aside, keeping the rendered fat in the pan.
- In the same skillet, add the sliced pears. Sauté over medium heat for about 4 minutes until they caramelize slightly and soften but retain their shape.
- Stir fresh peas into the skillet with the pears. Sauté for an additional 2-3 minutes until the peas are tender and bright green.
- Deglaze the pan with balsamic vinegar, scraping flavorful bits from the bottom. Stir in olive oil, and season with salt and pepper to taste. Mix the pancetta back into the pan to incorporate all flavors.
- Arrange the mixture on serving plates, ensuring a balanced presentation of pears, pancetta, and peas.
Notes
For an additional crunch, let the cooked pancetta rest on a paper towel to absorb excess fat before adding it back to the dish.
