Description

A comforting Sweet Potato and Chickpea Curry, filled with creamy coconut and warm spices. Quick to prepare, it’s perfect for weeknight dinners.


Ingredients

  • 2 tablespoons vegetable oil (or coconut oil)
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 12 tablespoons curry powder (mild or to taste)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric (optional)
  • 2 medium sweet potatoes, peeled and cut into 1-inch cubes (about 3 cups)
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (14–15 oz) full-fat coconut milk
  • 1 cup vegetable broth or water
  • 2 cups fresh spinach or chopped kale (optional)
  • Salt and black pepper to taste
  • 1 tablespoon lemon or lime juice
  • Fresh cilantro leaves, chopped (optional)
  • Cooked rice or warm naan

Instructions

  1. Prep ingredients: peel and cube the sweet potatoes, rinse the chickpeas, chop the onion, garlic, and ginger.
  2. Heat oil in a large skillet or pot over medium heat. Add chopped onion and cook for 5–7 minutes until soft and slightly golden.
  3. Add garlic and ginger, cooking for 1 minute until fragrant.
  4. Add curry powder, cumin, and turmeric, toasting the spices for 30–45 seconds in the pan.
  5. Add sweet potato cubes and stir to coat with spices. Cook for 2–3 minutes.
  6. Pour in coconut milk and vegetable broth. Stir well, bring to a gentle simmer, cover, and cook for 12–15 minutes until sweet potatoes are tender.
  7. Stir in chickpeas and cook uncovered for 5 more minutes.
  8. If using, add spinach or kale and cook for 1 minute until wilted. Season with salt, pepper, and lemon juice to taste.
  9. Serve hot, garnished with cilantro.

Notes

Use unsweetened canned coconut milk. For extra heat, add 1/2 teaspoon red pepper flakes or a chopped green chili.
