  • Fresh mint leaves (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 8-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, and salt. Set aside.
  3. Cream the softened butter with granulated sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Fold in the taro and ube purees until just combined.
  6. Gradually add the dry mixture to the wet ingredients, folding gently.
  7. Pour the batter into the prepared pans and bake for 25-30 minutes.
