Description
A bright and elegant pan-seared chicken dish, enhanced with lemon, garlic, and fresh herbs, finished with a silky lemon-butter sauce.

- 4 boneless, skinless chicken breasts (about 1 1/2–2 lb), pounded to even thickness
- Sea salt and freshly ground black pepper
- 2 tbsp extra-virgin olive oil
- 1 tbsp unsalted butter (room temperature)
- 3 cloves garlic, thinly sliced
- 1/3 cup dry white wine (or additional chicken stock)
- 1 cup low-sodium chicken stock
- 1/4 cup fresh lemon juice (about 2 lemons)
- 1 tbsp finely grated lemon zest
- 1 tsp Dijon mustard (optional)
- 2 tbsp cold unsalted butter, cut into small cubes
- 1 tsp fresh oregano, finely chopped (or 1/2 tsp dried)
- 1/2 tsp fresh thyme leaves
- 2 tbsp flat-leaf parsley, finely chopped
- Lemon slices or wedges, thinly sliced
- Optional: 1–2 tbsp rinsed capers
Instructions
- Pat the breasts dry, season both sides with salt and pepper, and pound to an even thickness.
- Warm a large skillet over medium-high heat until shimmering. Add olive oil and 1 tbsp butter. Add the chicken once the butter foams.
- Cook chicken 4–5 minutes per side until golden and internal temperature reads ~155°F. Transfer chicken to a warm plate.
- Reduce heat to medium, add garlic to the pan and sauté 30–45 seconds until fragrant.
- Deglaze with white wine, scraping up browned bits. Add chicken stock, lemon juice, and mustard; simmer until reduced by one-third and slightly syrupy, about 4–6 minutes.
- Off the heat, whisk in cold butter cubes to emulsify the sauce. Stir in lemon zest, oregano, and thyme.
- Nestle the chicken back into the sauce to warm through for 1–2 minutes.
- Transfer to a serving platter, spoon sauce over the chicken, and sprinkle with parsley, capers, and lemon slices. Serve immediately.
Notes
Pound the chicken evenly for uniform browning; finish the sauce off heat with cold butter for a velvety emulsion.
