Description

A bright and elegant pan-seared chicken dish, enhanced with lemon, garlic, and fresh herbs, finished with a silky lemon-butter sauce.


Ingredients

  • 4 boneless, skinless chicken breasts (about 1 1/22 lb), pounded to even thickness
  • Sea salt and freshly ground black pepper
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp unsalted butter (room temperature)
  • 3 cloves garlic, thinly sliced
  • 1/3 cup dry white wine (or additional chicken stock)
  • 1 cup low-sodium chicken stock
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 1 tbsp finely grated lemon zest
  • 1 tsp Dijon mustard (optional)
  • 2 tbsp cold unsalted butter, cut into small cubes
  • 1 tsp fresh oregano, finely chopped (or 1/2 tsp dried)
  • 1/2 tsp fresh thyme leaves
  • 2 tbsp flat-leaf parsley, finely chopped
  • Lemon slices or wedges, thinly sliced
  • Optional: 1–2 tbsp rinsed capers

Instructions

  1. Pat the breasts dry, season both sides with salt and pepper, and pound to an even thickness.
  2. Warm a large skillet over medium-high heat until shimmering. Add olive oil and 1 tbsp butter. Add the chicken once the butter foams.
  3. Cook chicken 4–5 minutes per side until golden and internal temperature reads ~155°F. Transfer chicken to a warm plate.
  4. Reduce heat to medium, add garlic to the pan and sauté 30–45 seconds until fragrant.
  5. Deglaze with white wine, scraping up browned bits. Add chicken stock, lemon juice, and mustard; simmer until reduced by one-third and slightly syrupy, about 4–6 minutes.
  6. Off the heat, whisk in cold butter cubes to emulsify the sauce. Stir in lemon zest, oregano, and thyme.
  7. Nestle the chicken back into the sauce to warm through for 1–2 minutes.
  8. Transfer to a serving platter, spoon sauce over the chicken, and sprinkle with parsley, capers, and lemon slices. Serve immediately.

Notes

Pound the chicken evenly for uniform browning; finish the sauce off heat with cold butter for a velvety emulsion.
