Description

A cozy and easy casserole dish that combines savory ground beef, mixed vegetables, cream of mushroom soup, and crispy tater tots, perfect for busy weeknights.


Ingredients

Scale
  • 1 lb (450 g) ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup frozen mixed vegetables (peas, carrots, corn), thawed
  • Salt and pepper to taste
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1/2 cup milk (or beef broth for richer flavor)
  • 1/2 cup shredded cheddar cheese, divided
  • 1 (32 oz) bag frozen tater tots, frozen (do not thaw)
  • 12 tbsp butter, melted (optional)
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C) and grease a 9×13-inch baking dish.
  2. Brown the ground beef in a large skillet over medium-high heat until no pink remains, about 6–8 minutes. Drain excess fat.
  3. Add the diced onion to the skillet and cook 3–4 minutes until softened. Stir in minced garlic and cook for 30 seconds.
  4. Stir in the thawed mixed vegetables and cook for 1–2 minutes. Season with salt and pepper.
  5. Mix in the condensed soup, milk, and half of the shredded cheddar until smooth and thick. Adjust seasoning as needed.
  6. Spread the beef and sauce mixture into the prepared baking dish. Top with a single layer of frozen tater tots.
  7. Optionally brush the tots with melted butter for extra browning.
  8. Bake uncovered for 25–30 minutes, until the tater tots are golden and the filling bubbles. Broil for 1–2 minutes for more color if necessary.
  9. Remove from oven and sprinkle remaining cheddar cheese over the tater tots. Let rest for 5 minutes before serving. Garnish with chopped parsley.

Notes

Use lean ground beef to cut excess grease. Consider swapping cream of mushroom for cream of chicken or a homemade white sauce.
