A cozy and easy casserole dish that combines savory ground beef, mixed vegetables, cream of mushroom soup, and crispy tater tots, perfect for busy weeknights.

- 1 lb (450 g) ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup frozen mixed vegetables (peas, carrots, corn), thawed
- Salt and pepper to taste
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1/2 cup milk (or beef broth for richer flavor)
- 1/2 cup shredded cheddar cheese, divided
- 1 (32 oz) bag frozen tater tots, frozen (do not thaw)
- 1–2 tbsp butter, melted (optional)
- Chopped fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C) and grease a 9×13-inch baking dish.
- Brown the ground beef in a large skillet over medium-high heat until no pink remains, about 6–8 minutes. Drain excess fat.
- Add the diced onion to the skillet and cook 3–4 minutes until softened. Stir in minced garlic and cook for 30 seconds.
- Stir in the thawed mixed vegetables and cook for 1–2 minutes. Season with salt and pepper.
- Mix in the condensed soup, milk, and half of the shredded cheddar until smooth and thick. Adjust seasoning as needed.
- Spread the beef and sauce mixture into the prepared baking dish. Top with a single layer of frozen tater tots.
- Optionally brush the tots with melted butter for extra browning.
- Bake uncovered for 25–30 minutes, until the tater tots are golden and the filling bubbles. Broil for 1–2 minutes for more color if necessary.
- Remove from oven and sprinkle remaining cheddar cheese over the tater tots. Let rest for 5 minutes before serving. Garnish with chopped parsley.
Notes
Use lean ground beef to cut excess grease. Consider swapping cream of mushroom for cream of chicken or a homemade white sauce.
