- 1 pound breakfast sausage, crumbled
- 1 package frozen tater tots
- 6 large eggs
- 1 cup milk
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- Diced green onions (optional)
- Salsa (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet over medium heat, cook the breakfast sausage until golden brown and drain any excess fat.
- In a large bowl, whisk together the eggs, milk, salt, and pepper until well blended.
- In a greased casserole dish, layer half of the tater tots, followed by half of the cooked sausage.
- Pour half of the egg mixture over the layers and sprinkle half of the cheddar cheese on top.
- Repeat the layers with the remaining tater tots, sausage, egg mixture, and finish with the remaining cheese.
- Bake for 30-35 minutes until the eggs are set and the top is golden brown.
- Allow to cool slightly, slice, and serve topped with green onions or salsa if desired.
Notes
Feel free to add veggies like chopped bell peppers or mix in spicy sausage for an extra kick. This casserole can also be assembled and frozen for later use.
