Delicious muffin version of French toast, infused with cinnamon and sugar, perfect for breakfast or brunch.

- 4 cups stale bread (French or Brioche), cubed
- 1 cup milk
- 3 large eggs
- 1/4 cup granulated sugar
- 1 tsp ground cinnamon
- 1 tsp vanilla extract
- 2 tbsp butter (melted)
- Powdered sugar (optional, for garnish)
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- In a large mixing bowl, whisk together the milk, eggs, sugar, cinnamon, and vanilla extract.
- Add the cubed bread and gently fold until well-coated. Let the mixture sit for about 10 minutes to allow the bread to soak up the liquid.
- Spoon the mixture into the prepared muffin tin, filling each cup to the top.
- Bake for 20-25 minutes until the tops are golden brown and crispy.
- Allow the muffins to cool for about 5 minutes before transferring them to a wire rack.
- Brush warm muffins with melted butter and roll in a mixture of cinnamon and sugar. Optionally, sprinkle with powdered sugar for garnish.
Notes
Ensure not to overmix the batter to maintain the texture of the bread cubes. Stale bread works best for soaking up the mixture.
