- 1 cup pitted dates, chopped
- 1 cup boiling water
- 1 teaspoon baking soda
- 2 cups all-purpose flour
- 3/4 cup sugar
- 1/4 cup butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup chopped nuts (walnuts or pecans)
- 1 teaspoon baking powder
- 1/2 teaspoon salt
Instructions
- Chop the dates and place them in a bowl. Pour boiling water over them, add baking soda, and let sit for 10 minutes.
- In a separate bowl, mix flour, baking powder, and salt.
- In another bowl, whisk together melted butter, sugar, egg, and vanilla.
- Fold the dry ingredients into the wet mixture gently, then stir in the soaked dates and chopped nuts until just combined.
- Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- Pour the batter into the pan and bake for 50-60 minutes, or until a toothpick comes out clean.
Notes
You can make this bread vegan by substituting the egg with a flax egg and the butter with coconut oil. For gluten-free, use a gluten-free flour blend.
