Ingredients

  • 1 cup boiling water
  • 1 teaspoon baking soda
  • 2 cups all-purpose flour
  • 3/4 cup sugar
  • 1/4 cup butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped nuts (walnuts or pecans)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Chop the dates and place them in a bowl. Pour boiling water over them, add baking soda, and let sit for 10 minutes.
  2. In a separate bowl, mix flour, baking powder, and salt.
  3. In another bowl, whisk together melted butter, sugar, egg, and vanilla.
  4. Fold the dry ingredients into the wet mixture gently, then stir in the soaked dates and chopped nuts until just combined.
  5. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  6. Pour the batter into the pan and bake for 50-60 minutes, or until a toothpick comes out clean.

Notes

You can make this bread vegan by substituting the egg with a flax egg and the butter with coconut oil. For gluten-free, use a gluten-free flour blend.
