Ingredients

  • Salt and freshly cracked black pepper to taste
  • Toasted chestnut pieces for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until soft and translucent, about 5 minutes.
  2. Add the roasted chestnuts to the pot and pour in the vegetable stock. Stir gently and bring to a simmer.
  3. Add the chopped sage, stirring to release its aromatic oils. Allow the soup to simmer for 15 minutes, allowing flavors to meld beautifully.
  4. Using an immersion blender, puree the soup until silky smooth. Alternatively, blend in batches using a standard blender.
  5. Return the pureed soup to low heat and stir in the heavy cream. Adjust seasoning with salt and pepper while allowing the soup to warm, avoiding boiling.

Notes

For an elegant presentation, garnish with toasted chestnuts and fresh sage leaves. A drizzle of truffle oil adds a luxurious touch.
