An elevated take on the traditional Thanksgiving turkey, featuring tender, herb-infused flavors and a sumptuous sauce.

- 1 whole turkey (12–14 pounds), thawed and cleaned
- 1 tablespoon kosher salt
- 1 teaspoon ground black pepper
- 4 tablespoons unsalted butter (room temperature)
- 1 cup chicken broth
- ½ cup white wine (preferably dry)
- 1 tablespoon fresh thyme (finely chopped)
- 1 tablespoon fresh rosemary (finely chopped)
- 2 cups bread crumbs (preferably homemade)
- 1 tablespoon fresh parsley (finely chopped)
Instructions
- Preheat your oven to 325°F (160°C). Pat the turkey dry with paper towels, then rub it inside and out with salt and pepper.
- Gently spread the softened butter all over the turkey for an even coating.
- In a saucepan, combine chicken broth, white wine, thyme, and rosemary. Simmer to infuse flavors.
- Place the turkey in a roasting pan, pour sauce into the bottom, and cover loosely with foil. Roast for 2.5 to 3 hours.
- 30 minutes before the turkey is done, mix bread crumbs with parsley. When the turkey reaches 165°F (74°C), remove it.
- Remove the foil, sprinkle the bread crumb mixture over the turkey, and return to the oven uncovered for 15-20 minutes until golden brown.
Notes
For enhanced juiciness, consider brining the turkey overnight. Alternatively, use seasoned rotisserie chicken for quicker prep.
