Instructions

  1. In a skillet over medium heat, melt one tablespoon of butter. Add onion and garlic, cooking until translucent and fragrant, about 5 minutes.
  2. In a large bowl, mix ground turkey, sautéed onion and garlic, stale bread, fresh parsley, sage, thyme, Dijon mustard, egg, salt, and pepper. Stir until just combined, preserving some texture.
  3. With damp hands, form the mixture into balls approximately the size of golf balls, ensuring each is compact.
  4. Preheat your oven to 375°F (190°C). Arrange the turkey balls on a baking sheet lined with parchment paper. Bake for 25–30 minutes, or until golden brown and cooked through.
  5. Meanwhile, in a saucepan, melt remaining butter over medium heat. Whisk in flour until golden, about 2 minutes. Gradually stir in broth, cooking until thickened, and season to taste.
