- 1 cup (2 sticks) unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup semi-sweet chocolate chips
- 1 cup granulated sugar (for caramel)
- 6 tablespoons unsalted butter, cubed (for caramel)
- 1/2 cup heavy cream, at room temperature
- 1 teaspoon fleur de sel, or to taste
- Additional fleur de sel, for sprinkling
Instructions
- Preheat the oven to 350°F (175°C) and prepare a 9×13 inch baking pan with parchment paper.
- Cream butter, brown sugar, and granulated sugar in a large bowl until light and fluffy. Add eggs one at a time followed by vanilla extract.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture and fold in chocolate chips.
- Pour half of the cookie dough into the prepared pan and bake for 15 minutes until just golden.
- In a saucepan over medium heat, melt sugar until it becomes a rich amber. Add cubed butter and whisk until melted. Stir in heavy cream and sprinkle in fleur de sel.
- Pour the salted caramel over the cookie layer and drop spoonfuls of the remaining dough on top. Bake for an additional 15-20 minutes.
- Allow to cool in the pan for at least 30 minutes before lifting out and cutting into bars.
