Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1 cup granulated sugar (for caramel)
  • 6 tablespoons unsalted butter, cubed (for caramel)
  • 1/2 cup heavy cream, at room temperature
  • 1 teaspoon fleur de sel, or to taste
  • Additional fleur de sel, for sprinkling

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a 9×13 inch baking pan with parchment paper.
  2. Cream butter, brown sugar, and granulated sugar in a large bowl until light and fluffy. Add eggs one at a time followed by vanilla extract.
  3. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture and fold in chocolate chips.
  4. Pour half of the cookie dough into the prepared pan and bake for 15 minutes until just golden.
  5. In a saucepan over medium heat, melt sugar until it becomes a rich amber. Add cubed butter and whisk until melted. Stir in heavy cream and sprinkle in fleur de sel.
  6. Pour the salted caramel over the cookie layer and drop spoonfuls of the remaining dough on top. Bake for an additional 15-20 minutes.
  7. Allow to cool in the pan for at least 30 minutes before lifting out and cutting into bars.
