Description

Ingredients

  • 1 cup all-purpose flour
  • ½ cup unsalted butter, at room temperature
  • ¼ cup powdered sugar
  • ½ teaspoon sea salt
  • ½ cup granulated sugar (for caramel)
  • ¼ cup heavy cream
  • 2 tablespoons unsalted butter (for caramel)
  • ¼ teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1 teaspoon coconut oil (for chocolate topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream the softened butter and powdered sugar until light and airy. Gradually add the flour and sea salt, mixing until the dough just comes together.
  3. Press the dough into a parchment-lined baking dish and bake for 15-20 minutes until lightly golden. Allow it to cool completely.
  4. In a small saucepan over medium heat, combine the granulated sugar, stirring constantly until it melts into amber-colored caramel (about 7-10 minutes). Incorporate heavy cream and butter, then remove from heat and add vanilla extract.
  5. Pour the caramel over the cooled shortbread base and let it set at room temperature for 30 minutes.
  6. In another saucepan, melt chocolate chips with coconut oil over low heat, stirring until smooth.
  7. Pour the melted chocolate over the caramel layer and chill in the refrigerator until fully set, approximately 1 hour.
  8. Slice into bars and serve, optionally garnished with a sprinkle of sea salt.

Notes

Store in an airtight container at room temperature for up to a week. They can also be refrigerated or frozen for longer storage.
