- 3/4 cup (150 g) granulated sugar
- 3/4 cup (165 g) light brown sugar, packed
- 2 large eggs, room temperature
- 2 teaspoons vanilla extract
- 2 1/2 cups (312 g) all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon fine salt
- 1 cup white chocolate chips or chopped white chocolate
- 3/4 cup freeze-dried strawberries, lightly crushed
- Optional: pink sanding sugar or sprinkles for decoration
Instructions
- Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a bowl, whisk together flour, baking soda, baking powder, and salt; set aside.
- Cream softened butter with granulated and brown sugar for 2–3 minutes until light and fluffy.
- Add vanilla and eggs one at a time, mixing well after each addition.
- Gradually add the dry mixture to the butter mixture until just combined.
- Fold in white chocolate chips and crushed freeze-dried strawberries gently.
- If necessary, chill the dough in the fridge for 20–30 minutes.
- Scoop dough onto prepared baking sheets, spacing them 2 inches apart, and press a few extra chips or strawberries on top.
- Bake for 9–12 minutes until edges are golden and centers look soft.
- Let cookies cool on the sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Use freeze-dried strawberries for vibrant color without adding extra moisture. Store cookies in an airtight container for up to 3 days at room temperature.
