- 2 tablespoons olive oil (extra virgin)
- 4 cloves garlic, minced
- 1 tablespoon fresh lemon juice
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and black pepper, to taste
- 4 chicken breasts (boneless, skinless)
- Fresh herbs (parsley or cilantro, finely chopped) for garnishing
Instructions
- In a medium bowl, whisk yogurt, olive oil, minced garlic, lemon juice, cumin, and paprika until combined. Season with salt and pepper.
- Add chicken breasts to the marinade, ensuring each piece is coated. Cover and refrigerate for at least 2 hours or ideally overnight.
- Preheat your grill to medium-high heat or oven to 375°F (190°C).
- Cook marinated chicken on the grill for 6-7 minutes on each side or bake in the oven for 25-30 minutes until cooked through.
- Rest the chicken for 5 minutes before serving.
- Garnish with freshly chopped herbs before serving.
Notes
For maximum flavor, marinate for up to 24 hours. Use leftover marinade as a sauce after simmering.
