Description

Ingredients

  • 2 tablespoons olive oil (extra virgin)
  • 4 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and black pepper, to taste
  • 4 chicken breasts (boneless, skinless)
  • Fresh herbs (parsley or cilantro, finely chopped) for garnishing

Instructions

  1. In a medium bowl, whisk yogurt, olive oil, minced garlic, lemon juice, cumin, and paprika until combined. Season with salt and pepper.
  2. Add chicken breasts to the marinade, ensuring each piece is coated. Cover and refrigerate for at least 2 hours or ideally overnight.
  3. Preheat your grill to medium-high heat or oven to 375°F (190°C).
  4. Cook marinated chicken on the grill for 6-7 minutes on each side or bake in the oven for 25-30 minutes until cooked through.
  5. Rest the chicken for 5 minutes before serving.
  6. Garnish with freshly chopped herbs before serving.

Notes

For maximum flavor, marinate for up to 24 hours. Use leftover marinade as a sauce after simmering.
