Description

A bright, fresh salad made with lime-marinated shrimp, creamy avocado, and vibrant cilantro.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • Juice of 2 limes (about 3 tablespoons)
  • 1 tablespoon olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 2 ripe avocados, diced
  • 1/4 to 1/2 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a bowl, marinate the shrimp in lime juice, olive oil, salt, and pepper for about 15 minutes.
  2. Heat a sauté pan over medium heat and cook the shrimp until pink and cooked through, about 3-4 minutes.
  3. In a large bowl, combine diced avocados, chopped red onion, and cilantro.
  4. Add the cooked shrimp to the bowl and toss everything gently to combine.
  5. Serve chilled and enjoy!

Notes

Use medium or large shrimp. If limes are small, add extra juice to taste. Choose firm-ripe avocados so they hold shape.
