- 2 large carrots, peeled and grated
- 2 medium apples, cored and diced
- 1 cup red cabbage, finely shredded
- 1/2 cup raisins or dried cranberries
- 1/2 cup walnuts or pecans, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup plain Greek yogurt
- 1/4 cup mayonnaise
- 2 tablespoons fresh orange juice
- 1 tablespoon lemon juice
- 1 teaspoon honey
- Salt and pepper to taste
Instructions
- Prep your station: place a large mixing bowl, cutting board, and box grater or food processor ready.
- Peel and grate the carrots into the large mixing bowl.
- Core the apples and chop them into small, bite-sized pieces, then add them straight to the bowl with the grated carrots.
- Shred the red cabbage finely and add it to the bowl with the raisins or dried cranberries, chopped nuts, and parsley.
- In a separate small bowl, whisk the Greek yogurt, mayonnaise, fresh orange juice, lemon juice, honey, and a pinch of salt and pepper until smooth and creamy.
- Pour the dressing over the salad mixture and gently toss until everything is well coated.
- Taste and adjust the seasoning with more salt, pepper, or honey if needed.
- If time allows, chill the salad about 15 minutes in the refrigerator to let the flavors meld before serving.
Notes
Great served with roasted chicken or salmon. Can be stored in the fridge for up to 3 days; keep extra dressing separate for maximum freshness.
