Ingredients

  • 1 cup long grain white rice
  • 2 cups beef broth
  • 3 tablespoons butter (divided)
  • 1 pound ground beef
  • 1 medium onion (finely chopped)
  • 4 cloves garlic (minced)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Melt 2 tablespoons of the butter in a medium saucepan over medium heat, add the rice, and toast for about one minute.
  2. Pour in the beef broth, bring to a boil, reduce heat to low, cover, and simmer for 18–20 minutes until the rice is tender; remove from heat and fluff with a fork.
  3. Heat a large skillet over medium-high heat and melt the remaining 1 tablespoon of butter.
  4. Add the onion and cook until softened, about 3–4 minutes. Stir in the garlic and cook for an additional minute.
  5. Add the ground beef to the skillet, season with salt and pepper, and break it into bite-sized pieces. Cook until browned and the liquid has evaporated.
  6. Lower the heat to medium, add half of the cheddar and mozzarella, and stir until the cheeses melt into the beef mixture.
  7. Divide the cooked rice among bowls, top each with the cheesy beef mixture, and sprinkle the remaining cheddar and mozzarella over the top.
  8. Cover the bowls briefly to allow the cheese to melt.
  9. Garnish with chopped parsley and serve immediately while hot.
