- 1 cup long grain white rice
- 2 cups beef broth
- 3 tablespoons butter (divided)
- 1 pound ground beef
- 1 medium onion (finely chopped)
- 4 cloves garlic (minced)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 tablespoon chopped fresh parsley
Instructions
- Melt 2 tablespoons of the butter in a medium saucepan over medium heat, add the rice, and toast for about one minute.
- Pour in the beef broth, bring to a boil, reduce heat to low, cover, and simmer for 18–20 minutes until the rice is tender; remove from heat and fluff with a fork.
- Heat a large skillet over medium-high heat and melt the remaining 1 tablespoon of butter.
- Add the onion and cook until softened, about 3–4 minutes. Stir in the garlic and cook for an additional minute.
- Add the ground beef to the skillet, season with salt and pepper, and break it into bite-sized pieces. Cook until browned and the liquid has evaporated.
- Lower the heat to medium, add half of the cheddar and mozzarella, and stir until the cheeses melt into the beef mixture.
- Divide the cooked rice among bowls, top each with the cheesy beef mixture, and sprinkle the remaining cheddar and mozzarella over the top.
- Cover the bowls briefly to allow the cheese to melt.
- Garnish with chopped parsley and serve immediately while hot.

Serve with a side salad or steamed vegetables for a balanced meal. Consider drizzling hot sauce or ranch dressing for added flavor.
