- 2 cups cooked rice or quinoa
- 1 cup chopped Romaine lettuce
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 1/2 cup tzatziki sauce (store-bought or homemade)
Instructions
- In a bowl, mix olive oil, paprika, garlic powder, onion powder, salt, and pepper. Add chicken and coat well.
- Heat a skillet over medium-high heat. Cook the chicken for about 6-7 minutes, flipping once, until golden brown and cooked through.
- Let the chicken rest for a few minutes. Slice it into strips for easy serving.
- Prepare your rice or quinoa according to package instructions.
- In each bowl, layer rice or quinoa, chopped Romaine lettuce, sliced chicken, and all the toppings. Drizzle with tzatziki sauce.
