Instructions
- In a large skillet, heat olive oil over medium heat until it shimmers.
- Add the chopped onion and minced garlic, cooking for 3-4 minutes until the onion becomes translucent.
- Add the sliced chicken breast and cook for 5-7 minutes, stirring occasionally until browned and cooked through.
- Mix in the sliced mushrooms, cooking for an additional 3-4 minutes until tender.
- Sprinkle flour over the mixture and cook for 1 minute to thicken the sauce.
- Gradually pour in the chicken broth, stirring until the sauce thickens, about 3-5 minutes.
- Reduce heat to low and stir in the sour cream until fully combined. Season with salt and pepper.
- Serve over cooked egg noodles or rice, garnished with chopped parsley if desired.
