- 2 medium potatoes, peeled and cubed

Instructions
- Begin by boiling the cubed potatoes in salted water until they are tender. Once done, drain them and let cool slightly.
- Mash the drained chickpeas using a fork or potato masher until mostly smooth but still slightly chunky.
- Incorporate the cooked potatoes, chopped onion, and minced garlic into the mashed chickpeas. Add the cumin, paprika, salt, and pepper, and mix everything until well combined.
- Form the mixture into patties, using your hands to shape them as desired.
- Heat olive oil in a skillet over medium heat. Once hot, carefully place the patties in the oil.
- Fry the patties for about 4-5 minutes on each side, or until they turn golden brown.
- Serve your chickpea potato patties warm, garnished with fresh herbs, if desired, and alongside a dipping sauce of your choice.
