Description

Enjoy the comforting taste of classic meatloaf that pairs perfectly with creamy mashed potatoes and fresh green beans.


Ingredients

  • 1 lb ground beef
  • 1 cup breadcrumbs
  • 1/2 cup onion, chopped
  • 1/2 cup milk
  • 1 egg
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • Salt and pepper to taste
  • 2 lbs potatoes, peeled and diced
  • 1/2 cup milk (for mashed potatoes)
  • 2 tbsp butter (for mashed potatoes)
  • 2 cups green beans, trimmed
  • 2 cups corn, frozen or fresh

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine ground beef, breadcrumbs, chopped onion, 1/2 cup milk, egg, ketchup, Worcestershire sauce, salt, and pepper in a large bowl. Mix until well combined.
  3. Shape the mixture into a loaf and place it in a baking dish.
  4. Bake for 1 hour or until the internal temperature reaches 160°F (70°C).
  5. Boil the diced potatoes in salted water until tender, about 15 minutes. Drain and mash with 1/2 cup milk and butter.
  6. Steam or boil the green beans and corn until tender.
  7. Serve the meatloaf with mashed potatoes and green beans & corn on the side.

Notes

Don’t overmix the meat for a tender result. Let the meatloaf rest for 10 minutes after baking for juiciness.
