Ingredients

- 1 lb ground beef
- 1 cup breadcrumbs
- 1/2 cup onion, chopped
- 1/2 cup milk
- 1 egg
- 2 tbsp ketchup
- 1 tbsp Worcestershire sauce
- Salt and pepper to taste
- 2 lbs potatoes, peeled and diced
- 1/2 cup milk (for mashed potatoes)
- 2 tbsp butter (for mashed potatoes)
- 2 cups green beans, trimmed
- 2 cups corn, frozen or fresh
Instructions
- Preheat your oven to 350°F (175°C).
- Combine ground beef, breadcrumbs, chopped onion, 1/2 cup milk, egg, ketchup, Worcestershire sauce, salt, and pepper in a large bowl. Mix until well combined.
- Shape the mixture into a loaf and place it in a baking dish.
- Bake for 1 hour or until the internal temperature reaches 160°F (70°C).
- Boil the diced potatoes in salted water until tender, about 15 minutes. Drain and mash with 1/2 cup milk and butter.
- Steam or boil the green beans and corn until tender.
- Serve the meatloaf with mashed potatoes and green beans & corn on the side.
Notes
Don’t overmix the meat for a tender result. Let the meatloaf rest for 10 minutes after baking for juiciness.
