- 1 tablespoon fresh chives, finely chopped
- 1 tablespoon fresh lemon juice
- 1 teaspoon Worcestershire sauce

Instructions
- In a mixing bowl, combine the diced chicken thighs with smoked paprika, garlic powder, salt, and pepper.
- Heat a skillet over medium-high heat, add olive oil, and sear the chicken for about 5–7 minutes until golden brown.
- In a small bowl, whisk together the butter, herbs, lemon juice, and Worcestershire sauce until smooth.
- Lower the heat, add the cowboy butter to the skillet, and toss gently to coat the chicken.
- Remove from heat and garnish with additional herbs before serving.
Notes
For an elegant twist, substitute chicken with shrimp or tofu. Serve on endive leaves for added freshness.
