- 2 tablespoons Olive oil
- 1 medium Shallot, finely diced
- 2 cloves Garlic, chopped
- 1 pinch Red chilli flakes
- 100 ml Dry white wine
- 2 tablespoons Tomato paste
- 1 teaspoon Italian seasoning mix
- 200 ml Water
- 100 grams Fresh spinach
- 100 grams Cream cheese
- 400 grams Gnocchi
- 150 grams Hot smoked salmon
- Salt, to taste
- Pepper, to taste
- Fresh parsley, for garnishing (optional)
Instructions
- Prep the ingredients: Dice the shallot, chop the garlic, and cut the salmon into bite-sized pieces.
- Heat the oil: In a large skillet, heat olive oil over medium heat.
- Sauté shallots and garlic: Add the shallots and garlic to the pan, cooking until soft and fragrant, about 3 minutes.
- Season with chili flakes: Stir in the red chili flakes for an extra hint of spice.
- Add the wine: Pour in the white wine, letting it simmer for 2–3 minutes until it reduces slightly.
- Mix in tomato paste and seasoning: Add the tomato paste and Italian seasoning, stirring well.
- Add water and spinach: Pour in the water and toss in the fresh spinach, allowing it to wilt.
- Cream it up: Stir in the cream cheese until melted and smooth.
- Cook the gnocchi: Cook the gnocchi according to the package instructions. Drain and add to the sauce.
- Finish with salmon: Fold in the smoked salmon gently.
Notes
Serve garnished with parsley. Pairs well with garlic bread or a salad. Freeze leftovers for up to 3 days.
