Description

Indulge in a rich, creamy salmon gnocchi that is quick to prepare and perfect for a cozy night in.


Ingredients

  • 2 tablespoons Olive oil
  • 1 medium Shallot, finely diced
  • 2 cloves Garlic, chopped
  • 1 pinch Red chilli flakes
  • 100 ml Dry white wine
  • 2 tablespoons Tomato paste
  • 1 teaspoon Italian seasoning mix
  • 200 ml Water
  • 100 grams Fresh spinach
  • 100 grams Cream cheese
  • 400 grams Gnocchi
  • 150 grams Hot smoked salmon
  • Salt, to taste
  • Pepper, to taste
  • Fresh parsley, for garnishing (optional)

Instructions

  1. Prep the ingredients: Dice the shallot, chop the garlic, and cut the salmon into bite-sized pieces.
  2. Heat the oil: In a large skillet, heat olive oil over medium heat.
  3. Sauté shallots and garlic: Add the shallots and garlic to the pan, cooking until soft and fragrant, about 3 minutes.
  4. Season with chili flakes: Stir in the red chili flakes for an extra hint of spice.
  5. Add the wine: Pour in the white wine, letting it simmer for 2–3 minutes until it reduces slightly.
  6. Mix in tomato paste and seasoning: Add the tomato paste and Italian seasoning, stirring well.
  7. Add water and spinach: Pour in the water and toss in the fresh spinach, allowing it to wilt.
  8. Cream it up: Stir in the cream cheese until melted and smooth.
  9. Cook the gnocchi: Cook the gnocchi according to the package instructions. Drain and add to the sauce.
  10. Finish with salmon: Fold in the smoked salmon gently.

Notes

Serve garnished with parsley. Pairs well with garlic bread or a salad. Freeze leftovers for up to 3 days.
