Ingredients

  • 3 cups butternut squash, cubed
  • 34 cloves garlic, minced
  • 1/2 medium onion, chopped (optional)
  • 1 cup low sodium broth or water
  • 1 cup cottage cheese or Greek yogurt
  • Parmesan cheese, to taste (optional)
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Cook the butternut squash until very soft, either by roasting or simmering with garlic and onion in broth.
