Description

A comforting and creamy dish combining cheese tortellini, savory sausage, and fresh spinach, perfect for busy weeknights.


Ingredients

  • 1 lb Italian sausage (mild or spicy)
  • 1 (19 oz) package frozen cheese tortellini
  • 4 cups fresh spinach, chopped
  • 1 (28 oz) can diced tomatoes (do not drain)
  • 1 (8 oz) block cream cheese, cubed
  • 4 cups chicken broth
  • 1 teaspoon minced garlic
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a skillet over medium heat, cook the Italian sausage until it’s browned and fully cooked. Drain any excess fat and set aside.
  2. In the slow cooker, add the cooked sausage, diced tomatoes (with juice), minced garlic, Italian seasoning, and chicken broth. Stir to mix the flavors.
  3. Place the cubed cream cheese evenly over the top and cover. Cook on low for 4-5 hours or on high for 2-3 hours.
  4. In the last 30 minutes, mix in the frozen cheese tortellini and spinach, stirring to ensure the tortellini cooks through and spinach wilts.
  5. Taste and adjust seasonings with salt and pepper before serving.
  6. Ladle into bowls and enjoy warm, optionally topping with grated Parmesan cheese or fresh herbs.

Notes

For a meat-free option, use plant-based sausage and vegetable broth. This dish can be frozen for up to 3 months.
