Ingredients

  • 2 cups Old-fashioned rolled oats
  • 1 cup Milk of choice (dairy or unsweetened almond or oat milk)
  • 1 cup Mashed ripe banana or unsweetened applesauce
  • 2 large Eggs or 2 flax eggs
  • 1/4 cup Pure maple syrup
  • 1/2 cup Unsweetened cocoa powder
  • 1 tbsp Baking powder
  • 1/2 tsp Fine sea salt
  • 1 tsp Vanilla extract
  • 1 cup Chocolate chips (semi-sweet or dark)
  • Optional: 1 tbsp Espresso powder
  • Optional: 1/2 cup Chopped nuts
  • Optional: 1 tbsp Peanut butter or almond butter

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare an 8-inch square pan by lightly greasing it or lining it with parchment paper.
  2. Whisk together the eggs (or flax eggs), mashed banana or applesauce, milk, maple syrup, and vanilla extract until smooth.
  3. Sprinkle the cocoa powder on top and whisk again to ensure there are no dry pockets of cocoa.
  4. Stir in the oats, baking powder, and salt until well combined.
  5. Fold in the chocolate chips and any optional add-ins like chopped nuts.
  6. Let the batter rest for about 5 minutes.
  7. Pour the batter into the prepared pan and add extra chocolate chips or dollops of peanut butter if desired.
  8. Bake in the preheated oven for 28 to 35 minutes, or until firm edges and moist crumbs.
  9. Cool for about 10 minutes before slicing.
  10. Serve warm with milk, Greek yogurt, or berries.

Notes
