- 2 cups Old-fashioned rolled oats
- 1 cup Milk of choice (dairy or unsweetened almond or oat milk)
- 1 cup Mashed ripe banana or unsweetened applesauce
- 2 large Eggs or 2 flax eggs
- 1/4 cup Pure maple syrup
- 1/2 cup Unsweetened cocoa powder
- 1 tbsp Baking powder
- 1/2 tsp Fine sea salt
- 1 tsp Vanilla extract
- 1 cup Chocolate chips (semi-sweet or dark)
- Optional: 1 tbsp Espresso powder
- Optional: 1/2 cup Chopped nuts
- Optional: 1 tbsp Peanut butter or almond butter
Instructions
- Preheat your oven to 350°F (175°C). Prepare an 8-inch square pan by lightly greasing it or lining it with parchment paper.
- Whisk together the eggs (or flax eggs), mashed banana or applesauce, milk, maple syrup, and vanilla extract until smooth.
- Sprinkle the cocoa powder on top and whisk again to ensure there are no dry pockets of cocoa.
- Stir in the oats, baking powder, and salt until well combined.
- Fold in the chocolate chips and any optional add-ins like chopped nuts.
- Let the batter rest for about 5 minutes.
- Pour the batter into the prepared pan and add extra chocolate chips or dollops of peanut butter if desired.
- Bake in the preheated oven for 28 to 35 minutes, or until firm edges and moist crumbs.
- Cool for about 10 minutes before slicing.
- Serve warm with milk, Greek yogurt, or berries.
Notes
Store leftovers in an airtight container for up to 4 days. Reheat in the microwave.
