- 1 lb (450 g) large carrots, peeled and cut into 3–4 inch batons
- 1 tbsp olive oil
- 1 tsp cornstarch
- 3/4 tsp fine sea salt
- 1/2 tsp smoked paprika
- 1/4 tsp garlic powder
- Zest and juice of 1/2 lemon
- 2 tbsp finely grated Parmesan
- 1 tbsp fresh parsley, finely chopped
- A light pinch of flaky sea salt for finishing
Instructions
- Preheat the air fryer to 400°F (200°C) for 3–5 minutes.
- Trim and cut carrots into uniform matchsticks.
- Pat the cut carrots dry with a kitchen towel and transfer to a large bowl.
- Toss carrots with olive oil, then sprinkle cornstarch and seasoning evenly.
- Arrange a single layer in the air-fryer basket, avoiding overcrowding.
- Cook for 10–12 minutes, shaking gently every 4 minutes.
- Remove when edges are caramelized and fork-tender, then toss with lemon zest and juice, Parmesan, parsley, and sea salt.
Notes
For best results, cut carrots uniformly and avoid overcrowding the air fryer basket. Cool completely before storing to maintain crispness.
