- 2 cups mixed vegetables (bell peppers, broccoli, carrots, etc.)
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, minced
- Salt and pepper to taste
- Cooked rice or noodles for serving
Instructions
- Begin by heating olive oil in a large skillet or wok over medium-high heat.
- Add the minced garlic and ginger. Sauté for about 1 minute until fragrant.
- Next, add the sliced chicken to the skillet. Cook until no longer pink, about 5-7 minutes, stirring frequently.
- After the chicken has cooked, toss in the mixed vegetables. Stir fry for another 3-5 minutes until tender but still crisp.
- Pour in the soy sauce, stirring well to combine and heat through.
- Finally, season with salt and pepper to taste.
- Serve the stir fry over cooked rice or noodles.
Notes
