Ingredients

  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Cooked rice or noodles for serving

Instructions

  1. Begin by heating olive oil in a large skillet or wok over medium-high heat.
  2. Add the minced garlic and ginger. Sauté for about 1 minute until fragrant.
  3. Next, add the sliced chicken to the skillet. Cook until no longer pink, about 5-7 minutes, stirring frequently.
  4. After the chicken has cooked, toss in the mixed vegetables. Stir fry for another 3-5 minutes until tender but still crisp.
  5. Pour in the soy sauce, stirring well to combine and heat through.
  6. Finally, season with salt and pepper to taste.
  7. Serve the stir fry over cooked rice or noodles.
