Description

A quick and easy baked cod recipe with lemon and garlic, perfect for a healthy weeknight meal.


Ingredients

Scale
  • 4 cod fillets (about 6 oz each), thawed if frozen and patted dry
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil or melted butter
  • 2 garlic cloves, minced (or 1 teaspoon garlic powder)
  • Zest and juice of 1 lemon
  • 1 teaspoon paprika (smoked or sweet)
  • 2 tablespoons chopped fresh parsley or 1 teaspoon dried parsley
  • 2 tablespoons plain breadcrumbs or panko (optional for a light crust)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking dish with foil or lightly oil it.
  2. Pat the cod fillets dry with paper towels. Season both sides with salt and pepper.
  3. In a small bowl, mix olive oil or melted butter with minced garlic, lemon zest, lemon juice, paprika, and chopped parsley.
  4. Place the fillets in the baking dish and spoon the lemon-garlic mixture evenly over each piece. Sprinkle breadcrumbs on top if using.
  5. Bake uncovered for 12–18 minutes until the flesh flakes easily and looks opaque.
  6. Remove from the oven and let the fish rest for 2 minutes; spoon pan juices over fillets before serving.

Notes

Use unsalted butter if you want to control salt. If fillets are thick, halve them horizontally or add a few extra minutes of baking.
