A quick and easy baked cod recipe with lemon and garlic, perfect for a healthy weeknight meal.

- 4 cod fillets (about 6 oz each), thawed if frozen and patted dry
- Salt and black pepper, to taste
- 2 tablespoons olive oil or melted butter
- 2 garlic cloves, minced (or 1 teaspoon garlic powder)
- Zest and juice of 1 lemon
- 1 teaspoon paprika (smoked or sweet)
- 2 tablespoons chopped fresh parsley or 1 teaspoon dried parsley
- 2 tablespoons plain breadcrumbs or panko (optional for a light crust)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking dish with foil or lightly oil it.
- Pat the cod fillets dry with paper towels. Season both sides with salt and pepper.
- In a small bowl, mix olive oil or melted butter with minced garlic, lemon zest, lemon juice, paprika, and chopped parsley.
- Place the fillets in the baking dish and spoon the lemon-garlic mixture evenly over each piece. Sprinkle breadcrumbs on top if using.
- Bake uncovered for 12–18 minutes until the flesh flakes easily and looks opaque.
- Remove from the oven and let the fish rest for 2 minutes; spoon pan juices over fillets before serving.
Notes
Use unsalted butter if you want to control salt. If fillets are thick, halve them horizontally or add a few extra minutes of baking.
